Fresh gnocchi is easy to make with the right tool. My custom designed walnut board gives the pillow shaped dumplings their signature ridges. Just press a ball of dough against its surface and roll with your fingers. The indentations help sauces cling to the gnocchi's exterior.
Gnocchi can be made with the most varied ingredients, such as squash, bread, and semolina flour. They can be flavored by mixing the dough with spinach, saffron, and even truffles. They are boiled in water or broth and, like pasta, they can be dressed with many sauces such as pesto, tomato, butter, and cheese.
