Peruvian Aji Amarillo chili seeds (organic):
One taste whisks you away to Peru where a symphony of exclusive dishes comes to mind. There are 2 different types of Aji Amarillo. In Peru where my spouse is from, the chilis are medium-sized, slender but bulky in the center, and yellow-gold. The second type is a long slender chili with the same flavor and color. This variety is the smaller aji.
These chilies have a unique flavor. I hadn't tried it until my spouse made me Peruvian dishes such as aji de gallina, causa de Pollo, Lomo Soldado, etc. The chili has a little heat, not much, but just the right amount. A slightly fruity, smoky, earthy flavor is more savory than sweet.
Whenever folks wonder what makes Peruvian food so unique and what the secret is, this is one of them. This can be used in dishes, to make aji cream dip for fried yucca fries (If you haven't tried them, you need to. We think they're better than french fries!), or to make your hot sauce, or dry/freeze them and use them as needed.
**A reviewer had expressed concern that only 5 seeds grew. After reaching out, we learned the reviewer hadn't used a heat mat or germination mat. Chili seeds must have a consistent soil temperature of 75-80º (F). Without a consistent heat source, chili seed soil can cool, which can result in poor or little germination. We provide instructions to ensure success, we encourage anyone who is having germination issues to reach out to help troubleshoot any hurdles you may be experiencing.
