Peruvian Aji Amarillo Grande chili seeds (organic):
This is the popular larger variety of the Peruvian Aji chili. We offer both small and large varieties, but the flavor is the same for both. These chilies have a very unique flavor. I hadn't tried it until my spouse made me Peruvian dishes such as aji de gallina, causa de Pollo, Lomo Soldado, etc. The chili has a little heat, not much, but just the right amount. There is a slightly fruity, smoky, earthy flavor that is definitely more savory than sweet.
Whenever folks wonder what makes Peruvian food so amazing and what the secret is, this is one of them. This can be used in dishes, to make aji cream dip for fried yucca fries (If you haven't tried them, you need to. We think they're better than french fries!), or to make your own hot sauce, or dry/freeze them and use them as needed.
Maturity date: 60-95 days, depending on temperatures and hardiness zones.
