Butternut Squash : A classic! Butternut squash ( also known as the butternut pumpkin or crookneck pumpkin) is prized for its delicate pumpkin-flavored flesh. This popular squash is convenient since it is harvested towards the middle of Fall and can last up to 3 months since it is classified as winter squash. This squash has a bulbous end and will start of delicate in flavor with tan skin, but turn deep orange and grow increasingly sweet. This squash can double for any recipe that uses sweet potatoes so why not try a butternut squash pie or butternut squash muffins? These can be trellised and do excellent on cattle panels or any sturdy wood or metal trellis. Although heavy, we have grown these and the stem is durable enough to suspend the squash by itself, but you may use an old t-shirt, towel, or produce bag to tie them to the trellis for additional support. The blossoms are edible and make a great garnish for soups and salads, or try deep-fried with a panko-curry crust. These are vining squash so you can grow these in pots, in raised beds, or in fertile ground. Seed to harvest is around 110-115 days. Vines are shorter but will produce a significant yield of squash. This variety has INTERMEDIATE POWDERY MILDEW resistance. For these, it's best to prevent mildew, but easier to fight than nonresistant varieties. These can be started indoors 2 weeks prior to the last frost date if you're in a colder zone. Transplant after the last chance of frost has passed. Plant at least 6 inches apart for either transplanting or sowing seed directly. These guys love full sun but will grow in partial shade.
